The satisfaction of home-made ravioli

Well, I finally accomplished a long intended often deferred task: the making of home-made gluten-free dairy-free ravioli.  Triumphant success!! Delicious flavor, enjoyable texture, satisfying effort to yield ration.  Fed my fellow and I and have one portion leftover.  The ravioli were enormous - probably 3 inch square.  I learned much from the process and will alter a few steps next making (smaller ravioli, buy a pastry wheel for cutting and pinching edges). Yum! Huzzah!
